- Tomatillo salsa
- Fresh corn – three ears
- Chopped grilled onion – 1/4 cup
- Cherry tomatoes, halved or quartered – 1/2 cup
- Extra virgin olive oil – 1 teaspoon
- Juice from 1 lime
- Chopped cilantro – 1/2 cup
- Black pepper, freshly grounded
- Flour tortillas – 8 to 10
- Crumbled feta cheese – 1/2 cup
- One sliced serrano pepper (optional)
